Prime rib turned out great. We pigged out last night for dinner. It was a smaller roast (3 1/2 pds), but still lots of left overs.
Today, I will zero in on just which (temp probe) is off. Had two different temp probes in roast and they were likely only about two inches apart and stuck clear into the middle of the roast.
Yet, they continually read about 28-30 degrees different.
So, obvious problem is (which) one is accurate??? I had to get out my instant read thermo pen to check the roast and damned if it didn`t read about half way between the other two probes.
I ended up getting it right as the doneness was righton for prime rib.
Today, I will be testing the probes together to pin down where the problem is..........
